Is your root filesystem ext4?
If not, there's a u-boot variable that you can change to keep it from trying to mount as ext4.

Is there an easy way to see what my root filesystem is? I'm very new to gumstix

Easiest way is to take the sdcard out and put it in another machine and look at the partitions that way to see how they're configured. If you don't run linux on any other system, a boot CD with gparted on it would be able to tell you what you needed to know.
